19th February – Italian Cookery
This comprehensive full day course will teach you many traditional Italian culinary skills. Making a classic saffron risotto, linguine with brown shrimps, goats cheese and spinach raviolo and assembling one of the worlds most iconic puddings.
25th February -Fish Masterclass
By the completion of the course you will understand the difference between white and oily fish. You will be able to fillet a flat and round fish. Scale fish, skin and fillet fish. Learn how to marinade, make fish stock, shallow fry red mullet, shallow poach fish and make sauces to accompany. 
26th February – Vietnamese Cookery

Join Hao Dang for a fascinating introduction to the delicious world of Vietnamese cookery. During the day you will create several dishes, including spring rolls and spicy beef stew. We are delighted that Hao is bringing her extensive knowledge of Vietnamese, Thai and Indian cookery to the school

14th April -Fish Masterclass Level 2
A new course launched for 2012. If you have attended our Fishmaster class then you will find our Level 2 course beneficial. The course is designed to expand your knowledge, develop your filleting skills and widen your cooking skills. More details to follow shortly.
Saturday 21st April – Chocolate Heaven £95
Your tutor will be taking you through the preparation of Chocolate tart in a chocolate pastry case. Raspberry truffle chocolate roulade. Sacher torte – one of the most famous Viennese culinary specialties and Chocolate pots- a dinner party favourite

Come along and join our perfect pastry course, to help you make and bake perfect pastry. You will learn how to produce fabulous puff pastry, crisp light sweet pastry, choux pastry and easy short crust pastry.

Aimed at students who may have attended our level 1 course, or bread makers wishing to expand their knowledge. You will prepare and bake Spelt Flour loaf, French baguette, Focaccia and Stollen.
