Italian Cookery – £120

   

 

    During this comprehensive full day course, James Claydon will teach you many traditional Italian culinary skills.  You will make some of Italy’s classic seasonal dishes.
Autumn

  • Wild mushroom risotto    
  • Ragout of wild venison, potato gnocchi and roast butternut squash with sage and rosemary
  • Spinach and ricotta ravioli

Winter

  • ‘Ribollita’ Tuscan style winter vegetable and cannellini bean soup with bread and new season’s olive oil
  • Fresh egg pasta
  • Pappardelle of wild hare and porcini mushrooms
  • Pear and almond tart with creme fraiche

Spring

  • Linguini of Crab with chilli, parsley & lemon
  • Fresh egg pasta
  • Pork Ossobuco – Italian for ‘bone with A hole’
  • Gremolatta

 Your course will begin at 9.30am through to 3.30pm.  All your ingredients, recipes and lunch are provided.
